Crock Pot BBQ Chicken Sandwiches

I love my Crock Pot.

It helps me out when I have a super busy day, but don't want to eat out or feed my family cereal for dinner. (Do you have those days?? If the answer is "no", then please don't respond.... ha ha)

This is one of our favorite recipes!! It's simple, quick, and good left over too!


Ok, are you ready for the extensive, complicated ingredient list?!

Yeah, not really. You need chicken breasts (I used 3 boneless, skinless), an onion, and BBQ sauce.


I have also used bone-in, skin-on chicken breasts before, when they were what I could afford instead of boneless, skinless, and that works fine too!! You just have to pick the bones and skin out before you shred the chicken at the end, but that only takes a few minutes!

Ok, so first, slice the onion and throw it into the bottom of the crock pot. I always spray my crock pot with Pam before I put stuff into it. I have no evidence that this helps with clean up, but it makes me feel better. 



Then plop in the chicken breasts. Gross. Raw meat is nasty. (Don't worry, it is super yummy after it's cooked though!)


Then, squirt some BBQ sauce over the chicken. You can add more later, so don't worry if you don't cover it all.


I usually cook it on low for 7 hours-


Oh, and I made some homemade rolls for the sandwiches. They were really good with the chicken! I have also used hamburger buns or even toasted bread if you don't have any hamburger buns in the house.


Ok, so after it's cooked, you'll need to get two forks and shred the meat. At this point you can add more sauce to the meat, or pass it around at the table. (That's what I do, because I don't like tons of sauce on mine)



I LOVE these sandwiches served with sweet potato fries (I get the frozen kind from Trader Joe's) and fruit or corn on the cob. It's nice in the summer because you don't have to heat up your house!





Easy!! And now you have dinner all ready, so you can put your feet up and.....uuhhhh..... take a nap? Read a book? Whatever you do when you have a few minutes to yourself . What DO you do when you have a few minutes to yourself? I used to watch "Everybody Loves Raymond" or the news. Now I usually work on writing my blog. Or look up cool races that I am interested in doing someday. Or sneak some candy when the kids aren't looking.

  7. Shari, we just finished dinner - I made this tonight - we LOVED them, and my husband reallly loved it, and he's being super good with eating healthy! We used the little mini burger buns from FreshnEasy, and they were on sale, six for $0.75. If I had time to make homemade, I woulda. Anyway, I want to tell you all about them, but I think I'll blog about them....in another blog of "what Shari made me make" so I can spread the word.
