Baking Day 3/12 Recipes and Photos

Spring Break Haiku

Spring break is timely-
a brief respite restores joy
in all things "mundane".

I know, I know, a poet I'm not. But I had to pay some sort of homage to Spring break! It has been so great to have the time to enjoy being in the kitchen, to play with the kids, to get together with friends...... I feel recharged!! Don't you love that? I left our schedule more open than I normally would- it was SUCH a good thing to do! It is nice to spend the whole day in the kitchen without feeling like I'm neglecting some other important agenda.

Baking day, therefore, was delightful this week! Here's what I made:


Homemade Cinnamon Rolls- if you haven't ever made these babies, make some!! They are SO yummy!! You can make the rolls to the point in the photo below, before the second rising, then freeze them to bake later!!


Don't skimp on the icing... mmmmmm.....


I also made a batch of Freezer Bean, Rice and Cheese Burritos- the recipe made enough to make 8 burritos and 3 burrito bowls (I'd rather have the calories in avocado than in tortilla.....) 



These are SO nice to have on hand for lunches, or for a quick dinner with a salad and some fruit!! They reheat in 3-4 minutes in the microwave!



I made a few dozen Make Your Own Tortillas- here's a question- do you like uncooked dough? My boys are always wanting to have some, I think it's gross. 



Lastly, I made a batch of Quick and Easy Cornbread- the boys love these! We had some with soup for dinner, and the rest for snacks during the week!
