Pumpkin Seed, Cashew, and Almond Butter Energy Bars




These energy bars are an adaptation from this recipe: Homemade Energy Bars. So you follow the directions from that post, using these dry ingredients:

  • 2 cups rolled oats
  • 2 cups rice krispies
  • 1 cup golden raisins
  • 1/2 cup raw, whole cashews
  • 1/2 cup roasted and salted green pumpkin seeds (also called Pepitas)
  • 1/4 cup wheat germ
And these wet ingredients:
  • 2/3 cup honey
  • 2/3 cup brown sugar
  • 2/3 cup almond butter (I used the one pictured below- it is my FAVORITE!)
I like to wrap them individually, so they are easy to grab for breakfast, lunch boxes, or a bike ride. So much cheaper than Clif Bars, and WAY tastier!!

  2. To make them even more MY favorite: I would (for me) take out the golden raisins, and put in dried cherries. mmmmmmm........

  4. My sweet friend Marti and I made these today - so fun to make together, we made 3 pans worth, and LOVE THEM! Since we started making them today at about 10 a.m., it's all I've eaten....and it's 5:34 p.m.

  5. These are my FAVORITE energy bar. Currently I am going through batches of them! I am going to force myself to make some Larabars!! But I LOVE the almond butter SO much!!!!!!!!!!

  6. I have had similar bars like these many years ago when my husband and I went on a 10 day leadership hiking/camping trip. I loved these energy bars and remember having to make them during our time for the next group coming along. I just couldn't remember all of the ingredients. This recipe looks very similar and I am going to make these. My husband works long hard hours and sometimes works through lunch. This is so unhealthy for him to do. He keeps snacks handy, but they aren't the best nutrition for him. These will be great substitutes if not better for him if he has to replace lunch with one of these. Thanks!!
