Baking Day 3/5 Recipes and Photos

Daytime television is horrible!

We are on spring break, so I decided I was going to watch television while I did baking day today. I was not impressed. There were several lame talk shows, and none of them held any interest for me. Bummer. I always sort of have this fantasy that after I'm done schooling the boys I will have this life where I sit with a cup of coffee and watch television, relaxing on the couch. 

I don't think so. Unless programming vastly improves in the next 9 years or so.....

I guess I'll probably just stick to a more realistic plan, which doesn't include couch-sitting and television. Darn.

Anyhow, back baking day. Here's what I made (While listening to the radio)...

Oreo brownies- these turned out WAY better than I even imagined! So simple too- just take a box of brownie mix (I used a 9x13 pan-sized mix) and some Oreos. I usually add chocolate chips, but Wade has been obsessed with Oreos lately, so I obliged him.


Chop a dozen or so of the Oreos, coarsely, reservine 3 or 4 for the top.


Add the rest in with the dry batter mix, then make and bake the brownies according to the package instructions, but sprinkle the reserved Oreos over the top before baking.



After they cooled, I cut them into squares and individually wrapped them in saran wrap. Nicholas had two friends over to play today, and they LOVED that they could just go and grab a brownie. I'm telling you, there's something about individually packaged food that makes it more appealing. 


I cup up some ripe bananas, then bagged them for the freezer, to be used for smoothies:



I made a batch of Make Your Own Chai Latte Mix- Christopher has been going through this stuff!! He likes it iced, and has some nearly every morning with breakfast!


I hard-boiled some eggs for snacks:



Bagged some Edamame:



Made a batch of Homemade Energy Bars- Wade has been taking these for snack at work each day, which comes in handy if he ends up working late. They're really filling, and he loves them.


Of course I wrapped them individually:


Then put them in the fridge:


Then I baked a loaf of Banana Bread for breakfasts- I love mine with some almond butter on top!


I pre-sliced it before wrapping it, to make it easy for the boys to grab a slice for breakfast or a snack!


At the end of the day, I did end up sitting on the couch, but with a book instead of television, my friend Dana loaned me a copy of Outlander by Diana Gabaldon. It has my interested piqued!

  1. We gave up tv almost two years ago...took some adjusting at first, and of course there's times we really miss it, but I'm grateful Daniel's made the sacrifice of missing all those sports games. Wondering how long we'll last....

    1. Jen, when I first quit my job we got rid of our TV for 3 years ....... we physically got rid of it! It was a big adjustment!
