"Whatever You Have" Chicken Stir- Fry (Easy and Quick Dinner Idea!)

It is that time of year when I still want to EAT at dinner time (duh, have you SEEN how much I talk about food?) but don't really want to spend a ton of time cooking every night. Mostly because where we live it gets HOT and often doesn't cool down until much later in the evening.

I like this stir-fry because I can use whatever veggies I have that sound good (And throw in some frozen stuff if I need to) and it's quick and easy.




These are my three favorite stir fry sauces. Kikkoman Teriyaki, Mr. Yoshida's Sauce, and Trader Joe's General Tsao Stir Fry Sauce. I used Mr. Yoshidas on the stir fry in this post, but I love all three.

I also add fresh garlic, and some ginger. I like to keep a jar of ginger in the fridge, because it keeps for a really long time, and it's already chopped. I use about 2 or 3 cloves of garlic, and about a teaspoon of chopped ginger, and throw that in with the chicken.

If you like your food spicy, add a few teaspoons (Or tablespoons if you're brave) of this Chili Garlic Sauce with the chicken. I add about a teaspoon, because we are spicy wimps in this household. (Except for Christopher, he is the only one who can eat really spicy things)

So I start with about a pound of cubed raw <gag> chicken, boneless skinless....

And a TON of veggies- some good things to use are snow peas, celery, asparagus, bell pepper, zucchini, green beans, carrots, bok choy (in the front of the photo), mushrooms, onion, WHATEVER veggies you have and like, chop them up!! The more veggies, the better!


Heat a few teaspoons of oil in a skillet, then add the chicken, garlic, ginger, and Chili Garlic sauce (if you're using it). Cook until the chicken is cooked through. Then you're going to remove the chicken from the pan and set is aside to cook the veggies:

I don't usually add more oil, but if you need to go ahead. Then throw the veggies in the skillet and cook them for several minutes, until they are almost done- you want them to be somewhat crunchy and not mushy.

Then add the chicken back to the pan and stir things up:

I like to throw in a few handfuls of nuts- my two favorites are peanuts or cashews:

The add some stir fry sauce. I add about 1/2 cup more or less- depending on how many veggies I've used- just eyeball it:

Then cook for a few minutes to get everything all flavored and yummy from the sauce, and serve over rice!

I used brown rice, I like the jasmine brown rice from Trader Joe's. Love that place.

  3. Robin, I love that sauce too! I like to stir fry green beans with it as a side dish! :)
