Crunchy Roasted Chickpeas- Smart Snack

I have a problem with snacks.

I heart them.

So, I suppose that isn't the actual issue... the real issue is finding snacks that are filling and good for me! (You know, snacks that aren't Red Vines and Coke....)

These fit the bill.....


They are really easy to make, and you can season them any way you like! I went with Cajun seasoning and salt, and LOVED it!


I made a double batch, but you can also just do one can of Garbanzo Beans (Chickpeas). You need:
  • 1 can Garbanzo Beans
  • Olive Oil
  • Salt (I like sea salt)
  • Seasoning of your choice (some ideas: Cajun, Curry, Lawry's Salt, Garlic salt and Cayenne Pepper...)

I used these seasonings. How hilarious is the Slap Ya Mama one?? I bought that in Louisiana when we were on our cross-country road trip! It is super tasty and also funny!!


You want to rinse the beans really well (I have said it before- what is that nasty juice in the bean can????)

Dump the rinsed beans onto a cookie sheet- put a few paper towels on the cookie sheet beforehand.

Then you want to rub them with another paper towel to remove the skins:




Drizzle them lightly with olive oil and sort of shake the pan to distribute the oil evenly. Then bake them at 450 for about 40 minutes. Err on the side of cooking them too long- you don't want them to be mushy. But watch them the last few minutes, you don't want them to burn. But there will be some brown toasty spots on the beans- that is fine!! Sprinkle them generously with whatever seasoning you're using, to taste.


That's it!! I just dumped them into a bowl lined with a paper towel, with plans to store them in a Ziploc bag later....

Except there weren't any left!!



....a little tiny hint... these are still BEANS! If you eat a ton of them...well......... you know...... hee hee....

I know. I am just a fountain of worthwhile information.
