...... and guess what??! The kids LOVED them too!!
Here's what you need:
- 1 lb ground beef (you could totally use turkey, I just had this AWESOME grass-fed, angus beef from my dad)
- 1/4 cup chopped onion
- 1 1/4 cup tomato sauce (I prefer Contadina) (It called for ketchup in addition to the tomato sauce, and I put it out in the photo, but I am not overly fond of ketchup. So I used only tomato sauce)
- 1/2 cup frozen corn
- 1/2 cup canned black beans, rinsed
- 1 chipotle chile, minced
- 1/2 tsp ground cumin
- 1/4 cup chopped cilantro
- 1/4 tsp each salt and pepper

This is the beef I used- it tasted SO good! My dad gave me a few pounds of it because he bought a side of beef from a farm!(or is it a ranch?) We don't usually eat red meat, but man, it was GOOD!!
So first, brown the beef and the onion in a pan, then drain off any fat.
In the meantime, chop up the chipotle. This is how it's sold, packed in adobo sauce. Yum. You can find it on the "international" aisle at the market, by the enchilada sauce and canned green chiles. They aren't super hot, but I only used one small chile- we are wimps.
Chop it up really fine. (Finely? I cannot find the right words today)
So after the beef is browned and drained, add all the rest of the ingredients except the cilantro, salt, and pepper. Bring it to a simmer, and simmer for 5 minutes.
Then add in the cilantro, salt, and pepper, and stir.
This. Is. So. Good. My dad came over for dinner, and we were all eating the meat mixture with chips as we were setting the table because it was SO GOOD!!!!!!!!! You must make this!! Put it on your menu!!
I think this would also be good served in a tortilla, or just with corn chips or tortilla chips!! It was delish! It was good leftover too!
So, in a few days I am taking part in a race that I am really excited about!! It's called the Ragnar Relay, and it's a 200-mile relay race. So we have a team of 12 that will all rotate- we each run 3 "legs" of the race.Each leg is between 3 and 9 miles. We run through the night, so that ought to prove interesting!! Our team is a group of friends that have trained together for years, and we all have so much fun when we hang out!! I have never done anything like this before, and I can't wait!!! I am sure we'll come out of it smelly, tired, and with huge grins on our faces. It should be epic. :) I like epic.
